Marketplace - Smoked Salmon
Smoking fish and meats originated thousands of years ago out of necessity rather than taste. Before the dawn of refrigeration there were only a few preservation options in order to keep meats and fish fresh through winter: salt brines, smoke, rock salt or a combination of the three. Since we all have a refrigerator in the kitchen these days salmon is smoked for flavor and is considered both a delicacy and a luxury item.
